Pumpkin Apple Spice Bread
Ingredients
Cake:
nonstick spray
16 ounces pumpkin puree
3/4 cup oil or applesauce
2 1/2 cups sugar

*"substitute for 1 egg." I used Ener-G
3 cups flour (I use 1/2 whole wheat + 1/2 white)
3/4 teaspoon salt
2 teaspoons baking soda
1 1/2 teaspoons cinnamon
1 teaspoon nutmeg
1 teaspoon cloves
1/4 teaspoon allspice
1/4 teaspoon ginger
2 large Granny Smith apples, peeled and chopped

Topping:
1 tablespoon flour
5 tablespoons brown sugar
1 teaspoon cinnamon
1 tablespoon oil

Directions:

1. Preheat oven to 350 degrees F. Coat 2 bread pans with cooking spray. In a large bowl with electric mixer, mix wet ingredients (pumpkin through egg replacer).

2. Stir the dry ingredients (flour through ginger) into the wet and mix with a spoon. Fold in the peeled and chopped apples. Mix together topping ingredients.

3. Pour batter into prepared bread pans and top with topping mixture. Bake for approximately 50 minutes, until toothpick comes out clean. Cool and enjoy!!!

Serves: 2 9X5" loaves, Preparation time: approx 30 minutes
*Egg Substitutions

A popular egg substitute is Ener-G Ener-G Egg Replacer, which is make from potato starch, tapioca flour,
leavening agents (calcium lactate , calcium carbonate, and citric acid) and a gum derived from cottonseed.
Its primarily intended to replace the leavening/binding characteristics of eggs in baking, but it can be used for
nonbaked foods and quiches.
