* SUSAN'S OATMEAL BARS * 2 C. COOKED OATMEAL I SM. JAR CINNAMON APPLE SAUCE 1 TBS. VANILLA EXTRACT 1TBS . PURE MAPLE SYRUP GOOD DASH CINNAMON 1/4 C. CHIA SEEDS 1/4 C. CHOCOLATE CHIPS OR CAROB CHIPS ( OPTIONAL ) 12 SM. PITTED DATES OR 1/2 C. RAISINS OR DRIED MIX FRUITS OF CHOICE 1/4 C. TO 1/2 C. NUT BUTTER OF CHOICE PUREE AND PLACE ON GREASED FRUIT ROLL TRAYS ( I USED COCONUT OIL ) DEHYDRATE @ 115 FOR SEVERAL HRS. UNTIL YOU CAN FLIP OFF THE TRAY AND DRIED UNTIL DESIRED TEXTURE . Lentil and Nut Roast * Roast: 2/3 C. red lentils 1 C. pine nuts 1 C. walnuts 1C. chia seeds or flax seeds ( your choice ) 1 large carrot 3 celery stalks 1 large onion or 6 green onions 4 oz. mushrooms 4 Tbs. vegan butter or olive oil 2 tsp. minced garlic 2 Tbs. tomato ketchup 2 Tbs. Worcestershire sauce 1 egg or egg sub. 2 tsp. sea salt 2 tsp. fresh cracked pepper 4 Tbs. fresh parsley, chopped 2/3 C. vegetable stock * Gravy: 1 large  onion, sliced 1large turnips or 1 celery root, sliced 3 celery stalks, sliced 4 oz. mushrooms sliced 2  garlic cloves (diced) 6 Tbs. safflower oil 6 C. vegetable stock 3 Tbs. Raw Coconut Aminos  pinch of stevia or tsp.honey Sea Salt and Ground Black Pepper to taste *Roast: Soak the lentils for 1 hour in cold water then drain well. Don’t Make Assumptions This is a great reminder! I cannot tell you how many times people I have known, mistakenly made assumptions, and people have made inaccurate assumptions about me because of the way I appear or something someone else has said. How many times have you heard something about someone and assumed the third-party speaker is telling the truth, only to find out later they were stretching, manipulating, or completely lying about the truth? Or a story is shared by someone who thinks they are telling a true story, but who in fact, are passing along an untrue rumor. It’s always best to ask questions and communicate directly with the actual person involved in any situation, not a third-party, before making assumptions. I know that sounds obvious, but we all need a reminder now and then, right? Good communication is pivotal in the success of our close relationships. VEGETABLE CURRY

VEGETABLE CURRY 4 cups chopped mixed vegetables (potatoes, carrots, cauliflower, french beans, and shelled green peas) 2 medium onion(s) chopped 1" piece ginger chopped 2 flake(s) garlic chopped 2 green chilli(es) chopped 1 teaspoon(s) hot spice mix (garam masala) (optional) 2 cup(s) coconut milk (canned unsweetened coconut milk is available in Asian / Indian markets) 1 cup(s) water 3 tablespoons vegan butter or olive oil salt to taste finely chopped coriander leaves to garnish. Parboil the chopped vegetables and keep aside. Heat half the quantity of vegan butter or olive oil in a pan on medium level till it is hot. Add the chopped onion(s). Saute on medium heat for 4 minutes or till the onions are transparent and soft. Now, add the chopped ginger, garlic and green chilli(es). Stir fry briefly for a few seconds. Let it cool. Zucchini Spaghetti with Marinara & Marinated Mushrooms Spaghetti 3 large zucchinis (( UseVeggie Twister for spaghetti )) Marinara 1 c. diced Roma tomatoes 1 c. of chopped red pepper 1/4 c. of packed fresh basil 1/4 c. fresh parsely 1/2 c. sundried tomatoes 2 cloves of garlic or to taste 1 to 2 Tbsp. of Raw Coconut Nectar (more or less to taste ) 1/4 c. olive oil 1/8 tsp. sea salt 1/8 tsp white pepper 1/8 t chilli flakes or to taste dash lemon juice 1. place all ingredients in a processor fitted with the S blade and pulse until all ingredients are mixed but not pureed. You want to maintain some texture. 2. Strain the sauce with a strainer 3. * Set aside until ready to serve with pasta Marinated Mushrooms: Ingredients: 2 c. of sliced mushrooms 1/4 c.
