Zucchini Spaghetti with Marinara & Marinated Mushrooms

Spaghetti
3 large zucchinis (( UseVeggie Twister for spaghetti ))

Marinara
1 c. diced Roma tomatoes

1 c. of chopped red pepper

1/4 c. of packed fresh basil

1/4 c. fresh parsely

1/2 c. sundried tomatoes

2 cloves of garlic or to taste

1 to 2 Tbsp. of Raw Coconut Nectar (more or less to taste )

1/4 c. olive oil

1/8 tsp. sea salt

1/8 tsp white pepper

1/8 t chilli flakes or to taste

dash lemon juice

1. place all ingredients in a processor fitted with the S blade and pulse until all ingredients are mixed but not pureed. You want to maintain some texture.

2. Strain the sauce with a strainer

3. * Set aside until ready to serve with pasta

Marinated Mushrooms:

Ingredients:
2 c. of sliced mushrooms

1/4 c. Coconut Secrect ( Raw Coconut Aminos )

1/4 c. of olive oil

dash lemon juice

1/2 tsp. white pepper

Set aside in the fridge for 1 hour.

When ready to serve, place zuchinni noodles on a plate, topped with marinara sauce and drained marinated mushrooms

*Note* If you would like this Raw but warm, while you wait fot the mushrooms to marinate ,put your sauce in a glass bowel and place it in the dehydrator on 105 >>> this will give you a warm, BUT Raw meal !!!
