VEGETABLE CURRY

VEGETABLE CURRY
4 cups chopped mixed vegetables (potatoes, carrots, cauliflower, french beans, and shelled green peas)
2 medium onion(s) chopped
1" piece ginger chopped
2 flake(s) garlic chopped
2 green chilli(es) chopped
1 teaspoon(s)
hot spice mix (garam masala) (optional)
2 cup(s) coconut milk (canned unsweetened coconut milk is available in Asian / Indian markets)
1 cup(s) water
3 tablespoons vegan butter or olive oil
salt to taste
finely chopped coriander leaves to garnish.

Parboil the chopped vegetables and keep aside. Heat half the quantity of vegan butter or olive oil in a pan on medium level till it is hot. Add the chopped onion(s). Saute on medium heat for 4 minutes or till the onions are transparent and soft. Now, add the chopped ginger, garlic and green chilli(es). Stir fry briefly for a few seconds. Let it cool. Grind this to a fine paste. Keep aside.
Heat the remaining quantity of vegan butter or olive oil in the same pan. Stir fry the paste on medium level till all the water has evaporated and the butter / ghee has left the sides of the pan. Now, add the parboiled vegetables and salt. Mix well. Cover and cook on medium / low heat for 3 minutes or till the vegetables are fully cooked.
Add the garam masala (optional), coconut milk and water. Simmer on very low heat (so that the coconut milk does not curdle) for about 4 minutes.
Garnish with finely chopped coriander leaves.

GOD BLESS & ENJOY *

The Lighthouse

The Lighthouse There's a Lighthouse on the hillside And it over looks life's sea When I'm tossed don't you know, It sends out a light A light that I might see And the light that shines in darkness now Will someday safely lead me home I know If it wasn't for that old Lighthouse I know my ship would sail no more Everybody that lives around us Well they all say, tear it down They say the big ship why they don't sail by this way anymore It just aint no use to it standing around Then my mind goes way out back to that stormy night Just in time I saw the light Don't you know it was the light, that old Lighthouse It still stands there on the hill And I thank God for the Lighthouse I owe my life to Him For Jesus is the Lighthouse And from the rocks of sin He has shown His light around me That I could clearly see If it wasn't for the Lighthouse (tell me) Where would this ship be? And I thank God for the Lighthouse I owe my ...

God Is With Me !

God Is With Me! Let me tell you something of my friend, And as I do, perhaps all of you will recognize The value of my prize. For all my worldly wealth, My physical and mental health, In storm or weather fair Depends upon His care. I've learned each day, to choose the way, To loose my fears, And though troubles press, With sore distress upon my soul, I know somehow that He is with me now And will be through the passing years. Yes - He is with me Even though in thought I've often caught myself So far away from Him- And even though I sometimes join the race- Away from his Amazing Grace, I always turn around to find He's there, Behind my fleeing foot, To put His hand upon my heart To draw me back To live with Him - Apart. He is with me, Especially when my other friends misunderstand The methods that I use, Or when they refuse to see That He and I are friends, Working silently to make 'not' brake the strongholds of the faith. H...
