Eggplant Parmesan Griller's

A large eggplant

Large block of mozzarella cheese or (vegan)

Romano pecorino (parmesan) cheese or (vegan parmesan )

2 eggs, egg beaters, or vegan egg sub.

1/4 cup milk ( soy, almond ) your choice

Parsley flakes (or fresh)
1 larger onion sliced thin

Garlic minced

Marinara sauce

Italian style bread crumbs

olive oil

This is a new twist on an old favorite (So Easy )
Roast the eggplant until tender , let cool.
Grill onions until tender , set 1/2 aside .
when the eggplant has cooled to the touch , place in food proc. , food mill or what ever you have .mash (lumpy). in a large bowel add the ,masshed eggplant, eggs(or sub) ,milk, cheese, 1/2 the grilled onion,,parsley, garlic and the bread crumbs..
Not the sauce or mozzarella ....
with an ice-cream scoop , make your patties , grill them or pan fry in olive oil .
Take the patties when cooked and place 1or 2 Tbs. of sauce and a slice of the mozzarella ,broil just to melt the cheese ...serve with pasta or as a great Italian style burger (YUM)
